You made a New Year’s resolution to eat healthier—and now that the excess of the holidays is over, you intend to keep it. Make it easy on yourself, by mastering a few techniques that help make delicious food healthy and healthy food delicious. You will be in the kitchen with Chef Eytan Kurland, getting hands-on training and education. Perfect your chopping, sauteing and roasting, and pick up new skills as you learn some of the simple secrets behind your favorite Dharmakaya dishes. Most importantly, learn how to incorporate these techniques and recipes into your daily life.
Every day starts with yoga and includes some optional meditation practices. You may even like it so much that vegan-uary ends up lasting the whole year. Come on your own or bring a friend. Hands-on cooking is on the menu, so class size is strictly limited to 10 people.

PROGRAM DESCRIPTION
You promised that you would start eating more healthily. But where to start? Here! Learn how to prepare vegetarian and vegan dishes that not only offer comfort during the long winter months, but that dazzle your tastebuds and improve your health. We will work side-by-side in the kitchen, chopping, stirring and tasting. You’ll go home with the course recipes and some bonus ones—plus the knowledge to :
- Prepare comforting meals that aren’t heavy or rich
- Scale recipes to feed a crowd easily
- Choose ingredients to cook seasonally
Put on an apron, come hungry, and leave with confidence and recipes to replicate at future home meals.

Teacher
Eytan has been cooking professionally for nearly two decades, with deep experience in healthy, vegetarian, farm-to-table cuisine. A world-traveler, he has trained extensively in spiritual and retreat centers worldwide, as well as organic farms, New York City restaurants and as a caterer and private chef. Eytan enjoys making clean, nutritious food that is innovative and delicious, holistically nourishing, and supportive of an active life and spiritual practice. Among other metrics, his success is measured by consistent rave reviews from Dharmakaya retreatants. He is inspired by his grandmother, who was a cooking instructor and consummate entertainer.
